Welcome to our new feature – Recipe of the Month! I’m kicking things off by sharing one of my all-time favourites: Burnt Basque Cheesecake.
Originating from San Sebastián in Spain, this crustless cheesecake is known for its beautifully caramelised top and soft, custard-like centre—achieved by baking at a high temperature. Despite its rich ingredients, it’s surprisingly light and airy, with no fiddly crusts or complicated water baths in sight. A dream to make!
This cheesecake is so beloved there's even a shop in London that sells nothing but this—well worth a visit if you're nearby. I recently made one for Shavuot, but honestly, it’s far too good to only enjoy once a year.
